Anari

Anari is a ricotta type cheese with high protein and low fat. It is made from the whey which drains off during manufacturing of Halloumi. When the solids of Halloumi cheese are removed from the boiler the process of Anari production begins. Crumbly curds of cheese start forming, after adding additional fresh milk to the whey residue. The curd is skimmed off the surface and placed in strainers that allow further drainage and shaped in moulds.

anariThe product can be consumed either fresh or in the dry form. When consumed fresh can be part of breakfast or as a healthy dessert with honey. Dry anari is quite often used as grated for pasta dishes.

The fat content of fresh Anari is approximately 15%, protein 12% and 50mg cholesterol per 100g.
