Halloumi

Halloumi is officially recognized world wide as a distinctive cheese. Halloumi cheese is the most important dairy product of Cyprus, produced in the island for many centuries. It is a unique cheese which is widely used as part of the Mediterranean diet. fried-xalloumi-saladHalloumi is produced from sheep's and/or, goat's milk with or without Cow's milk. One of the main characteristics of Halloumi is that it can be manufactured from any milk proportion (cow's, goat's, or sheep's milk) provided that there is any quantity of sheep's or/and goat's milk. The different types of milk that are in the production of Halloumi are indicated on the label of the product in descending order of proportion.

Halloumi is a folded cheese and has a rectangular or semi-circle shape. It is usually stored in temperatures below 8 °C and can be preserved in -18°C for months. All manufacturers are registered under the competent authorities and apply the HACCP (Hazard Analysis and Critical Control Points) quality system.

Halloumi cheese produced and packaged in carries a quality mark and a registration number of the European Union which guarantees that the product is produced under controlled hygienic conditions and it is of high quality.

Size and Composition

Halloumi is usually vacuum packed weighing 220 - 270 g. The fat content is approximately 25%, and the moisture content approximately 46%.
