Halloumi Cheese & Tomatoes

Ingredients
2 big ripe tomatoes
250gr halloumi cheese, sliced
Fresh bay leaves
1 large onion cut in rounds
Avocado slices
2 tablespoons fresh chopped chives
Oil and vinegar
Salt 
Cayenne pepper

Preparation
Cut the tomatoes in round slices.  Place the halloumi slices in a non-stick frying pan and fry on both sides until slightly golden.  In the same pan, sauté the bay leaves, after you crush them with your hands.
In a large serving plate, place the halloumi cheese forming half circle and decorate the inside part with the avocado slices.  Form a smaller circle with the tomato rounds and in the middle, place the onion on top of the tomatoes and around the bay leaves.
Sprinkle with the chopped chives, olive oil on the halloumi and tomatoes and a bit of vinegar on the tomatoes only.
Finally slightly salt the tomatoes.

Note: You may sprinkle the halloumi cheese with chopped mint instead of chives.

Halloumi Cheese parcels

Ingredients

12 puff pastry sheets
1 packet halloumi cheese
Mint leaves
Sunflower oil and some sesame oil for frying

Preparation
Cut the halloumi cheese in 12 slices.  Separate the sheets, one by one, as per the package instructions.  Place one halloumi cheese slice in each filo, adding mint leaves on both sides.  Roll filo in a parcel.  Once all pies are ready, heat some sunflower oil and some sesame oil and deep fry the parcels in medium fire on both sides, turning them around carefully not to damage them and spill the halloumi cheese.  

Serve while hot.

Halloumi Cheese Pie

Ingredients

  500g plain flour 
  15g Salt 
  20g instant yeast 
  80ml Olive oil 
  90ml Milk 
  90ml tepid water 
  150g halloumi cheese, cubed 
  2 tbsp dried Mint 
  olive salad, to serve 

Directions

  1. In a large mixing bowl, mix together the flour, salt, yeast, olive oil, milk and water together to form a smooth dough. Knead until smooth. 
  2. Place the dough in a lightly oiled bowl, cover with cling film and leave in a warm place to rise for 1 hour. 
  3. Break down the dough and mix in the halloumi and dried mint.
  4. Shape the dough into a ball, place on a greased baking sheet, cover and leave to rise in a warm place for another hour.
  5. Preheat the oven to 230ºC/gas 8. Bake the bread for 30 minutes until golden and cooked through.
  6. Cool the bread on a wire rack. 
  7. Serve the halloumi bread with an olive salad.

Halloumi Turkey Salad

Ingredients

250 g salad green leaves 
1 tablespoon olive oil 
1 (250 g) package halloumi cheese 
2 tablespoons pine nuts 
1 turkey breast cut into cubes 
1 cup cherry tomato 
1/4 cup lemon-infused with olive oil 
4 tortilla or flat bread

Directions

 1. In a non-stick pan, warm the olive oil gently over a medium-high heat. Slice the halloumi and add it to the pan. After a couple of minutes, add the  pine nuts and turkey breast. Turn every few minutes. Cook until the halloumi is brown.
 2. In a large bowl, add salad leave and cherry tomatoes. 
 3. Meanwhile, toast tortillas or flatbread until crispy. 
 4. Add halloumi mix to salad bowl, and pour lemon olive oil. Over top stir to coat. Serve over flatbread.

Halloumi Cheese with Lemon & Olive oil

Ingredients

  5 ounces halloumi cheese 
  1/2 lemon, juice of 
  1 ounce olive oil 
  cracked black pepper 

Directions

  1. Slice the halloumi into 1/4 inch thick slices. 
  2. Char-grill or pan-fry the cheese in the olive oil until lightly   browned. 
  3. Drizzle over the lemon juice and cracked black pepper. 
  4. Serve.
